Ahhh Thanksgiving. Is there another day that is as warm and family centric in the year? Every year my dad invites over our entire family for a huge Thanksgiving feast, we are talking 45 people dinners here, and every year it is even more fun than the last. There is family football, football on TV (go niners!), drinks, music and of course, tons of food. It is one of my favorite days of the year, but unfortunately (fortunately?) this year we just bought a house and we will be spending the holidays away from family here in Austin. There is just so much remodeling to be done that we could not pass up having a free week to work on it.
So does this mean we will be missing out on food and good times? Of course not! This year we will be having a fabulous Friendsgiving on Thanksgiving day. The best part about hosting our own Friendsgiving is that we won’t have to dodge eggs, dairy and meat like the plague all night. We are making out own vegan-friendly feast, which I can assure you is far from bland.
This mashed salted cocomel sweet potato dish is one of my all time favorites, and even if you are celebrating with family it is the perfect food to bring to ensure there is at least one thing you can eat. I made it with the ever so wonderful JJ’s Cocomels, and let me tell you, it did not disappoint. I have used their wonderful sweets for a few past creations like this one and this one, but this might be my all time favorite. Typically I add salt to the cocomel sauce when I have to make it from scratch, but using the cocomels salted caramel flavor is quick, easy, and so yummy.Thank you to my lovely readers for supporting the work that we do here, and a very happy Thanksgiving to you all!
